 Post subject: Fish on the grill

This time it was Dolphin(Mahi)Grouper,Striper,Kingfish,Snapper and Wahoo all work as well
You need a large piece of Tin foil to make a pan with folded edges to keep everything out of the grill.
Place 1/2 stick of butter in pan and coat so filet doesn't stick.
Place filet pieces skin down on buttered foil.
Sprinkle Tony Checharras seasoning on filet.
Add a small can of pineapple juice to your pan with some Cruzan Mango rum(or whatever your drinking)
Cook filet till its white 3/4 the way through and GENTLY turn it over.Cook till filet till its white.
The butter,rum and juice should have reduced to a nice sweet and spicy glaze for your filet by now.Enjoy!

This can be done on a small boat grill without too much hassle or mess.

You can throw some pre-cooked and peeled shrimp or lobster chunks in that sauce as it reduces. 8-)
